Cranberry Orange Bliss Balls

Cranberry and orange are a delicious taste of fall, and these easy no-bake bliss balls are a simple way to enjoy them. Sweetened with honey and made with your choice of creamy almond or peanut butter, they're chewy, lightly spiced, and full of bright citrus flavor. They're perfect for a crisp fall afternoon, an easy snack on the go, or a little bite to enjoy with a warm cup of coffee.

Ingredients:

1 cup old-fashioned oats
¾ cup creamy almond butter or creamy peanut butter
⅓ cup honey
½ cup dried cranberries, finely chopped
¼ cup unsweetened shredded coconut
2 tablespoons ground flaxseed
1 tablespoon finely grated orange zest
1½ tablespoons fresh orange juice
½ teaspoon vanilla extract
¼ teaspoon cinnamon
Pinch of salt
¼ cup mini white chocolate chips, optional


Instructions:

  1. In a medium bowl, combine the oats, almond butter or peanut butter, honey, cranberries, coconut, flaxseed, orange zest, orange juice, vanilla, cinnamon and salt.

  2. Stir until everything is thoroughly combined and the mixture holds together when pressed.

  3.  Fold in the white chocolate chips, if using.

  4. Refrigerate for 20–30 minutes, or until the mixture is firm enough to handle easily.

  5. Roll into approximately 1-inch balls. 

Store in an airtight container in the refrigerator.
