Hoppin’ John is more than just a comforting Southern dish of black-eyed peas, rice, and savory pork—it’s a time-honored New Year’s tradition. Eaten on January 1, black-eyed peas are believed to bring good luck and prosperity for the year ahead, while collard greens or other leafy vegetables symbolize wealth. Rooted in African and Southern culinary traditions, Hoppin’ John combines flavor, history, and symbolism, making it a delicious way to welcome a fresh start and celebrate abundance in the coming year.

Ingredients:
1 cup black-eyed peas, soaked overnight and drained
4 cups low-sodium vegetable or chicken broth
1 Bay Leaf
1 cup long-grain white rice
1 medium onion, finely chopped
1 green bell pepper, chopped
2 cloves garlic, minced
2 tablespoons Callicutt Cajun Blackened Spice Blend
1 teaspoon smoked paprika
1/2 teaspoon ground black pepper
1/2 teaspoon salt (adjust as needed)
2 tablespoons olive oil
4 slices thick-cut bacon, chopped (optional for vegetarian omit)
2 green onions, sliced (for garnish)
Hot sauce (optional, to serve)
Instructions:

Cook the aromatics: In a large pot, heat olive oil over medium heat. If using bacon, cook until crispy, then remove and set aside. Add onion, bell pepper, and garlic to the pot and sauté until soft and fragrant, about 5 minutes.

Season the peas: Stir in the Callicutt Cajun/Creole spice, smoked paprika, black pepper, and salt. Toast the spices for 30 seconds to release their aroma.

Simmer the black-eyed peas: Add the drained black-eyed peas and broth. Bring to a boil, then reduce heat and simmer uncovered for 30–35 minutes, or until peas are tender but not mushy.

Cook the rice: While the peas are simmering, cook the rice separately according to package instructions.

Combine and finish: Once peas are tender, stir in the cooked rice and reserved bacon (if using). Adjust seasonings to taste. Heat through for 2–3 minutes.
