Animante NV typically offers a refreshing, bright sparkler: the crisp orchard & citrus fruit plus fine acidity and minerality give energy and clarity, while the lees-derived creaminess, brioche/yeast texture, and subtle savory/mineral edge add complexity and a more serious character than many simpler sparkling wines.

Aroma often shows crisp orchard fruits: think Green apple (Granny Smith / Pink Lady), white pear, yellow plum, sometimes white peach or Golden Delicious apple. 

On the palate you may find stone-fruit and citrus flavors — apple, pear, often a touch of lemon or lime zest. 

Texture, Bread & Yeast-Driven Layers

Thanks to extended lees aging (20–30 months), the wine develops a creamy, almost brioche- or baked-bread–like texture — some tasters detect bread crust, sourdough, or pastry-like notes. 

You may also notice honey or acacia honey, sometimes dried fruit or very light toasted-nut hints. 

Minerality, Acidity & Finish

A defining characteristic: lifted acidity and a distinct mineral — sometimes chalky or flinty — core, giving freshness and backbone.

The finish tends to be clean, sometimes saline or subtly salty, often lingering with mineral- and citrus-tinged notes. 

Floral / Subtle Aromatic & Savory Notes
