Spicy Dark & Sweet White Chocolate Bark

This bark is all about contrast - deep, rich dark chocolate with a little heat paired with creamy white chocolate that’s sweet, bright, and full of texture. The dark chocolate bark starts out rich and familiar, then finishes with a subtle chile kick that sneaks up on you. The white chocolate version goes in the opposite direction - creamy, sweet, and bright with dried cranberries, toasted nuts, and a touch of orange. Together, they make such a pretty fall pairing, and I especially love serving both so everyone can choose between spicy, sweet, or a little of each.


Spicy Dark Chocolate Bark

Ingredients:

12 ounces good quality dark chocolate, roughly chopped

½ cup pecan halves or pieces

¼ cup shelled pistachios

¼ teaspoon ancho chile powder

⅛ teaspoon cayenne pepper

⅛ teaspoon ground cinnamon, optional

Flaky sea salt, to taste


Instructions:

  1. Line a baking sheet or large cutting board with parchment paper.

  2. Melt the dark chocolate gently in a double boiler or in the microwave in short intervals, stirring frequently until smooth.

  3. Stir the ancho chile powder, cayenne pepper, and cinnamon, if using, into the melted chocolate until completely incorporated.

  4. Pour the chocolate into a chocolate bar mold, tapping gently to release any bubbles  or onto parchment paper and spread it into a thin, even layer, approximately ¼ inch thick.

  5. Scatter the pecans and pistachios evenly over the chocolate, gently pressing them into the surface.

  6. Finish with a light sprinkling of flaky sea salt. For a little visual hint of the heat inside, you can also add the faintest dusting of ancho chile powder over part of the bark.

Allow the bark to set completely at room temperature, or refrigerate it briefly until firm.  Break into irregular pieces and store in an airtight container in a cool place.

Sweet White Chocolate Bark

Ingredients:

12 ounces good quality white chocolate, roughly chopped

½ cup dried cranberries

⅓ cup pecan halves or pieces

¼ cup shelled pistachios

½ to 1 teaspoon finely grated fresh orange zest

Flaky sea salt, to taste

Equipment:

Chocolate bar molds or a baking sheet or large cutting board lined with parchment paper

If using molds: Make sure the chocolate bar molds are clean and completely dry. Do not grease them. If using hard plastic molds, polish the cavities with a soft, lint-free cloth before adding the chocolate.

Instructions:

  2. Melt the white chocolate gently in a double boiler or in the microwave in short intervals, stirring frequently until smooth.

  3. Stir the orange zest into the melted white chocolate.

  4. Pour the chocolate into a chocolate bar mold, tapping gently to release any bubbles  or onto parchment paper and spread it into a thin, even layer, approximately ¼ inch thick.

  5. Scatter the dried cranberries, pecans, and pistachios over the surface, gently pressing the toppings into the chocolate.

  6. Finish with a very light sprinkling of flaky sea salt.

Allow the bark to set completely at room temperature, or refrigerate briefly until firm.  Break into irregular pieces and store in an airtight container in a cool place.

Variations

Smoky Dark 

Replace the ancho chile powder and cayenne with ¼ teaspoon smoked chipotle chile powder. Add a tiny pinch of cinnamon if desired. The chipotle gives the chocolate a warm, smoky depth with a subtle heat that lingers just slightly at the finish.

Warm Cinnamon Dark 

Add ¼ teaspoon ancho chile powder, ⅛ teaspoon cayenne, and ¼ teaspoon cinnamon. Pecans are especially good in this version. This combination gives the chocolate a warm, gently spiced flavor with a touch of heat and a cozy cinnamon finish.

Maple White

Omit the orange zest and add ¼ teaspoon maple extract to the melted white chocolate. Top with pecans and a small amount of pistachios. A few dried cranberries can still be added for color, or they can be left out for a simpler maple-pecan version.  The maple adds a mellow, buttery sweetness that pairs especially well with the toasted pecans and gives the bark a warm fall flavor.

Salted Toffee White

Omit the orange zest and add ⅓ cup finely chopped toffee bits along with the pecans. Keep a small amount of pistachios if you like the color contrast, and finish with a light sprinkle of flaky sea salt. The toffee adds a buttery caramel note and a little extra crunch, while the sea salt keeps the white chocolate from tasting overly sweet.
